It can be a challenge to serve a dinner that pleases everyone. But for families whose day-to-day meal plan has to take food allergies into account, it can feel impossible. When my older sister was first diagnosed with a high gluten intolerance, my whole family shifted our lifestyle and eating habits. My mom, being the amazing chef that she is, loaded up on easy gluten-free dinner recipes for the family that we all genuinely loved. I like to add a bit of red pepper flakes to my bowl to give it some spice, and it’s also delicious topped with goat cheese. Described as a “cleaned-up spaghetti-o” dish, I guarantee that this recipe will find its way into your weekly meal rotation. You can use any gluten-free pasta you prefer and it’ll be just as delicious.
